- 1 cup apple butter
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup chopped apples
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or lightly grease the cups.
- Whisk together the apple butter, sugar, vegetable oil, eggs, and vanilla extract until smooth in a large mixing bowl.
- In a separate bowl, whisk the flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Fold in the chopped apples and nuts (if using) into the batter.
- Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
- Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the muffins to cool in the pan for 3–5 minutes, then transfer them to a wire rack to cool completely.
