Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking sheet.
  2. In a bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
  3. Cream the softened butter and granulated sugar together until light and fluffy, then add the egg, apple cider, and vanilla, mixing until smooth.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them apart.
  6. In a small bowl, mix the 1/4 cup sugar with 1 teaspoon cinnamon for coating.
  7. Bake for 10-12 minutes until lightly golden.
  8. Remove from oven, cool slightly, and roll warm cookies in cinnamon sugar mixture.
