Ingredients

  • 4 chicken thighs
  • 1 cup apple cider
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Season the chicken thighs with salt and pepper. Brown the chicken in the skillet for about 5-6 minutes on each side until golden. Remove and set aside.
  2. In the same skillet, add sliced onion and minced garlic. Cook until the onion is soft and translucent.
  3. Pour in the apple cider, bring to a boil, and scrape up any bits stuck to the bottom.
  4. Return the chicken to the skillet, reduce heat to low, cover, and simmer for about 20-25 minutes until chicken is fully cooked and tender.

Notes

For extra flavor, marinate the chicken in apple cider for a few hours before cooking. You can also swap chicken thighs for breasts for a leaner option, but adjust the cooking time.
