Instructions
- Measure the almond milk and chia seeds. Peel and dice the apple into small, even pieces. Have the maple syrup and cinnamon ready.
- In a bowl, combine almond milk, chia seeds, maple syrup, and cinnamon. Stir vigorously for 30 seconds to prevent clumps.
- Let the mixture sit for about 10 minutes to thicken, stirring once after 5 minutes.
- Fold in the diced apple. Spoon the pudding into glasses or jars. Top each serving with granola and your choice of nuts and seeds. Serve chilled.
