A delightful breakfast treat bringing apple pie flavors to pancakes, topped with homemade vanilla maple syrup.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 cup diced apples
  • 1 teaspoon ground cinnamon
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  2. In another bowl, combine the buttermilk, large egg, and melted butter. Mix in the diced apples and cinnamon until evenly coated.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake. Cook until bubbles form, then flip and cook until golden brown.
  4. For the syrup, heat the maple syrup in a saucepan, stirring in the vanilla extract. Serve pancakes warm with syrup.

Notes

For fluffier pancakes, let the batter rest before cooking. Store leftovers in an airtight container.
