Description

These Asiago Roasted Onions are simple, savory, and full of sweet, caramelized flavor, topped with a nutty Asiago crust.


Ingredients

Scale
  • 2 large onions
  • 2 tablespoons olive oil
  • 1/2 cup grated Asiago cheese
  • Salt and pepper to taste
  • Fresh herbs (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Peel the onions and trim the root and stem ends.
  2. Slice the onions into thick rings (about 1/2 inch) and arrange them in a single layer on a baking sheet. Drizzle olive oil over the onion rings and season with salt and pepper, coating both sides.
  3. Roast the onions for 25–30 minutes until tender and caramelized at the edges.
  4. Sprinkle the grated Asiago cheese over the onions and return to the oven for an additional 5–7 minutes, until the cheese melts and bubbles.
  5. Let the onions rest for 2 minutes before serving. Garnish with fresh herbs if desired.

Notes

For extra caramelization, broil for 1–2 minutes at the end, watching closely. Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
