Instructions
- In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes soft and translucent, about 3 minutes.
- Add the ground chicken to the skillet. Cook, breaking it apart with a spatula, until browned all the way through, about 5-7 minutes.
- Stir in the diced bell pepper and grated carrots, cooking for another 3-4 minutes until the vegetables are tender yet still crisp.
- Mix in the soy sauce, hoisin sauce, rice vinegar, and sesame oil. Stir well to ensure everything is evenly coated. Season with salt and pepper to taste.
- Serve the chicken mixture in lettuce leaves, garnished with chopped green onions and sesame seeds.

For added flavor, consider using ground turkey or a mix of chicken and turkey. Fresh crisp lettuce is recommended for the best texture. The chicken mixture can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
