Ingredients

  • 1 lb ground chicken
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup carrots, grated
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Lettuce leaves for wrapping
  • Chopped green onions and sesame seeds for garnish

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes soft and translucent, about 3 minutes.
  2. Add the ground chicken to the skillet. Cook, breaking it apart with a spatula, until browned all the way through, about 5-7 minutes.
  3. Stir in the diced bell pepper and grated carrots, cooking for another 3-4 minutes until the vegetables are tender yet still crisp.
  4. Mix in the soy sauce, hoisin sauce, rice vinegar, and sesame oil. Stir well to ensure everything is evenly coated. Season with salt and pepper to taste.
  5. Serve the chicken mixture in lettuce leaves, garnished with chopped green onions and sesame seeds.

Notes

For added flavor, consider using ground turkey or a mix of chicken and turkey. Fresh crisp lettuce is recommended for the best texture. The chicken mixture can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
