- 1 pound gnocchi
- 6 slices bacon, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove the bacon pieces and set them aside on a paper towel. Keep the bacon drippings in the pot.
- Add the diced onion to the pot with the bacon drippings and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Pour in the chicken broth and bring to a gentle simmer. Add the gnocchi and cook according to package instructions, usually about 2–3 minutes until they float to the top.
- Lower the heat and stir in the heavy cream and shredded cheddar cheese until smooth. Season with salt and pepper. Serve hot, garnished with crispy bacon and chopped fresh parsley.
Notes
For added flavor, sauté the onion in a bit of bacon fat first. Use freshly shredded cheese for the best melting texture.
