Ingredients

- 2 pounds baby potatoes
- 1 cup cooked bacon, crumbled
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 cup shredded cheddar cheese
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Rinse the baby potatoes and trim any blemishes. Cook bacon until crisp, then crumble.
- Whisk together the sour cream, mayonnaise, and seasoning in a large bowl.
- Boil a pot of salted water, add potatoes, and cook until tender, about 15–20 minutes. Drain and let cool.
- Add warm potatoes to dressing, then stir in bacon, cheddar, and green onions.
- Cover and refrigerate for at least 1 hour before serving.
Notes
For best texture, keep garnishes separate until serving.
