Description

These bacon-wrapped dates filled with tangy goat cheese are a simple, crowd-pleasing appetizer that blend sweet, chewy dates with creamy goat cheese and crispy bacon.


Ingredients

  • 20 pitted dates
  • 10 slices of bacon (cut in half)
  • 4 ounces of goat cheese
  • Toothpicks

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with foil or parchment and set a rack on top if you have one. If your dates are not pitted, remove pits carefully. Cut each bacon slice in half so you have 20 pieces.
  2. Spoon about a small dollop (approx. 1/4 teaspoon) of goat cheese into each pitted date. Press the cheese in so it sits snugly inside the date. Work steadily to keep the filling neat.
  3. Wrap each stuffed date with one half-slice of bacon and secure with a toothpick. Place the wrapped dates on the prepared baking sheet without crowding. Bake for about 15–20 minutes, turning once if needed, until the bacon is crisp and browned.
  4. Let the dates rest a minute or two after baking so the cheese firms slightly. Transfer to a serving platter and serve warm. Remove toothpicks before eating if you prefer.

Notes

Serve warm as an appetizer. Pair with dry white wine or light beer. Store in the refrigerator for up to 3 days.
