Description

Ingredients

  • 2 cups apple cider
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a doughnut pan well with nonstick spray or a light smear of oil.
  2. Pour the apple cider into a medium saucepan and bring it to a boil over medium-high heat. Reduce the heat and simmer until reduced to about 1 cup.
  3. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In another bowl, whisk the eggs until smooth, then add applesauce, vegetable oil, vanilla extract, and the cooled reduced apple cider.
  5. Pour the wet ingredients into the dry mixture and stir gently until just combined.
  6. Spoon the batter into the prepared doughnut pan, filling each cavity about two-thirds full.
  7. Bake the doughnuts for 12–15 minutes, or until a toothpick inserted comes out clean.
  8. Let the doughnuts cool in the pan for 3–5 minutes, then transfer to a wire rack.
  9. In a small bowl, whisk together powdered sugar, maple syrup, and cinnamon for the glaze.
  10. Dip the tops of the cooled doughnuts into the glaze and let excess drip back into the bowl.
  11. Allow the glaze to set for 10–15 minutes before serving.

Notes

Store in an airtight container for up to 2 days at room temperature or in the refrigerator for 5 days. Avoid freezing glazed doughnuts.
