Description

A warm, savory dish featuring baked feta cheese and eggs with roasted tomatoes, perfect for brunch or dinner.


Ingredients

  • 4 large eggs
  • 200 g feta cheese
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (such as basil or parsley) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a small baking dish or ovenproof skillet.
  2. Place the block of feta in the center of the dish and arrange the cherry tomatoes around it. Drizzle with olive oil and sprinkle with pepper.
  3. Make wells around the feta and crack one egg into each well. Bake for 15–20 minutes, checking for doneness.
  4. Remove from oven, let rest, garnish with herbs, and serve warm.

Notes

For best texture, use a block of feta and avoid freezing leftovers.
