Ingredients

- 2 cups rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 2 cups milk (dairy or non-dairy)
- 1/4 cup honey or maple syrup
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup mixed berries (fresh or frozen)
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, mix the oats, baking powder, salt, and cinnamon.
- In another bowl, whisk together the milk, honey (or maple syrup), eggs, and vanilla extract.
- Combine the wet ingredients with the dry ingredients and mix well, ensuring the oats are fully moistened.
- Fold in the berries gently to prevent bleeding.
- Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 20–25 minutes, or until the edges are golden and a toothpick comes out clean.
- Let cool slightly before removing from the muffin tin.
Notes
Serve warm with a drizzle of maple syrup or a spoonful of yogurt. Store in an airtight container; lasts up to 5 days in the fridge.
