Delightful banana bars topped with rich cream cheese frosting, perfect for family gatherings or as an after-school snack.


Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 ounces cream cheese, softened
  • 1/4 cup butter, softened (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, beat together the mashed bananas, sugar, brown sugar, and softened butter until smooth. Add the eggs and vanilla extract and mix well.
  3. In another bowl, combine the flour, baking soda, baking powder, and salt. Stir into the banana mixture until just combined. Pour the batter into the prepared baking pan and bake for about 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  4. Allow the bars to cool in the pan. For the frosting, beat together the cream cheese, softened butter, vanilla extract, and powdered sugar until smooth. Once the bars are cool, spread the frosting evenly over the top and cut into squares.

Notes

Use very ripe bananas for best flavor. Let bars cool completely before frosting.
