Description

A classic dessert featuring ripe bananas and rich custard in a buttery graham cracker crust, topped with whipped cream.


Ingredients

  • 1 pre-made graham cracker pie crust
  • 3 ripe bananas
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1 1/2 cups milk
  • 3 egg yolks
  • 1 teaspoon vanilla extract
  • Whipped cream (for topping)

Instructions

  1. In a saucepan, mix sugar, cornstarch, and a pinch of salt. Gradually add milk while stirring. Cook over medium heat until thickened.
  2. In a separate bowl, whisk the egg yolks together. Slowly add a small amount of the hot mixture into the egg yolks to temper them. Stirring constantly, return the egg mixture to the saucepan and cook for another 2 minutes.
  3. Remove the saucepan from heat and stir in the vanilla extract until well combined.
  4. Slice 2 bananas and layer them in the bottom of the pie crust. Pour the custard over the bananas. Chill in the refrigerator for at least 4 hours until set. Before serving, slice the remaining banana for topping and add whipped cream on top.

Notes

Be sure to use ripe bananas for the best flavor and texture. This pie is best enjoyed fresh and can be stored in the refrigerator for up to 3 days.
