  • 2 ripe bananas, mashed
  • 1/4 cup sugar
  • 1/3 cup melted butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (walnuts or pecans)
  • 1 tablespoon ground cinnamon
  • 1/2 cup brown sugar

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a baking dish (an 8×8-inch or similar works well). Lightly flour a clean work surface.
  2. Mix the mashed bananas, 1/4 cup sugar, melted butter, egg, and vanilla extract in a bowl until smooth. In another bowl, whisk together the 2 cups flour, 1 tablespoon baking powder, and 1/2 teaspoon salt. Gradually add the dry ingredients to the banana mixture and stir until a soft dough forms.
  3. Roll the dough out on the floured surface into a rectangle about 10×12 inches. Spread a little melted butter over the dough surface, then sprinkle evenly with 1/2 cup brown sugar, 1 tablespoon ground cinnamon, and 1/2 cup chopped nuts. Press the filling gently so it adheres.
  4. Roll the dough tightly from the long edge into a log. Slice the log into 8 equal rolls and place them cut-side up in the greased baking dish. Bake for 20–25 minutes or until golden brown and set in the center. Let cool slightly before serving.
