- 2 ripe bananas
- 1 box vanilla wafers
- 1 cup milk
- 1 cup heavy cream
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a saucepan, whisk together the sugar, cornstarch, and a pinch of salt. Gradually add the milk while whisking until smooth.
- Place the saucepan over medium heat and cook, stirring constantly until it thickens, about 5-7 minutes.
- Remove from heat and stir in the vanilla extract until combined.
- In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the pudding mixture.
- In a serving dish, layer the vanilla wafers, sliced bananas, and the pudding mixture, repeating layers as needed.
- Refrigerate for at least 2 hours before serving to set and meld flavors.
Notes
Serve chilled, garnished with banana slices or crumbled wafers. Best consumed fresh, although it keeps for 2-3 days in the fridge.
