Description

A delightful and creamy banana pudding layered with vanilla wafers and ripe bananas, perfect for any occasion.


Ingredients

  • 2 ripe bananas
  • 1 box vanilla wafers
  • 1 cup milk
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a saucepan, whisk together the sugar, cornstarch, and a pinch of salt. Gradually add the milk while whisking until smooth.
  2. Place the saucepan over medium heat and cook, stirring constantly until it thickens, about 5-7 minutes.
  3. Remove from heat and stir in the vanilla extract until combined.
  4. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the pudding mixture.
  5. In a serving dish, layer the vanilla wafers, sliced bananas, and the pudding mixture, repeating layers as needed.
  6. Refrigerate for at least 2 hours before serving to set and meld flavors.

Notes

Serve chilled, garnished with banana slices or crumbled wafers. Best consumed fresh, although it keeps for 2-3 days in the fridge.
