  • 4 ripe bananas, sliced
  • 1 cup brown sugar
  • 1/2 cup butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 cup milk
  • 1/4 cup sugar
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking dish with butter or nonstick spray.
  2. In a medium saucepan over medium heat, melt the butter. Add the brown sugar and stir until smooth. Add the sliced bananas, vanilla extract, and cinnamon. Cook for 2–4 minutes until the bananas are warmed and coated in sauce. Remove from heat.
  3. In a separate bowl, whisk together the flour, baking powder, sugar, and salt. Gradually stir in the milk until the batter is smooth and thick but pourable.
  4. Pour the batter into the prepared dish. Spoon the banana mixture evenly over the batter. Bake for 30–35 minutes until the top is golden and a toothpick comes out clean. Let it sit a few minutes before serving warm.

Notes

For a special touch, flambé a splash of dark rum in the pan off the heat before spooning over the batter for a classic flavor.
