- 1 cup egg whites (about 8 large eggs)
- 1 cup granulated sugar
- 1 cup cake flour
- 1/2 teaspoon cream of tartar
- 1/8 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- Red food coloring (as needed)
Instructions
- Preheat the oven to 350°F (175°C). Use an ungreased angel food cake pan.
- In a large bowl, beat the egg whites on medium speed until foamy, then add cream of tartar and salt, beating until soft peaks form.
- Gradually add the granulated sugar, continuing to beat until stiff peaks form. Sift together cake flour and salt in a separate bowl, then fold into egg whites carefully.
- Mix in vanilla and almond extracts, and add red food coloring for desired shade. Pour batter into the pan and bake for 35-40 minutes until golden brown. Invert to cool completely before removing from pan.
Notes
Serve plain or with a dusting of powdered sugar, fresh berries, or whipped cream. Best enjoyed fresh.
