Ingredients

- 2 lbs beef, cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 parsnips, chopped
- 3 cups beef stock
- 1 cup ale
- 2 tbsp flour
- Salt and pepper to taste
- 1 tbsp Worcestershire sauce
- Puff pastry for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a large pot, brown the beef cubes over medium heat until golden brown.
- Add the chopped onions and minced garlic, cooking until softened, then add carrots and parsnips for an additional 5 minutes.
- Sprinkle the flour over the mixture, stirring to combine, then add beef stock and ale, along with Worcestershire sauce, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 1 hour until the beef is tender.
- Transfer the mixture to a baking dish and cover with puff pastry, sealing edges.
- Bake for 25-30 minutes until the pastry is golden brown.
- Allow to cool for a few minutes before serving hot.
Notes
Serve warm with a green salad or crusty bread, and pair with ale or robust red wine.
