Description

A hearty blend of tender beef, sweet parsnips, and a rich ale-infused gravy, topped with flaky puff pastry, perfect for chilly evenings.


Ingredients

  • 2 lbs beef, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 parsnips, chopped
  • 3 cups beef stock
  • 1 cup ale
  • 2 tbsp flour
  • Salt and pepper to taste
  • 1 tbsp Worcestershire sauce
  • Puff pastry for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, brown the beef cubes over medium heat until golden brown.
  3. Add the chopped onions and minced garlic, cooking until softened, then add carrots and parsnips for an additional 5 minutes.
  4. Sprinkle the flour over the mixture, stirring to combine, then add beef stock and ale, along with Worcestershire sauce, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for about 1 hour until the beef is tender.
  6. Transfer the mixture to a baking dish and cover with puff pastry, sealing edges.
  7. Bake for 25-30 minutes until the pastry is golden brown.
  8. Allow to cool for a few minutes before serving hot.

Notes

Serve warm with a green salad or crusty bread, and pair with ale or robust red wine.
