Description

A delightful twist on the classic dessert, combining tender cake with fresh, juicy berries, all baked on a single sheet.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • Whipped cream for serving

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a sheet pan to prevent sticking.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, mix the melted butter, buttermilk, and vanilla extract until smoothly blended.
  4. Pour the wet mixture into the dry ingredients and gently stir until just combined. Spread the batter evenly in the prepared sheet pan and top it with mixed berries.
  5. Bake for 20-25 minutes, or until the top is golden and a toothpick inserted comes out clean.
  6. Allow it to cool before cutting into squares and serving with a dollop of whipped cream.

Notes

For best results, serve warm or at room temperature topped with whipped cream and extra berries.
