Ingredients

  • 1 pound fresh mushrooms, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until translucent (3-4 minutes).
  2. Add the sliced mushrooms and cook until browned and tender (5-7 minutes).
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  4. Blend the soup until smooth using an immersion blender.
  5. Stir in the heavy cream and season with salt and pepper to taste.
  6. Serve hot, garnished with freshly chopped parsley.

Notes

For extra flavor, consider using a variety of mushrooms. Can be made vegan by substituting heavy cream with coconut cream.
