- 1 pound fresh mushrooms, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until translucent (3-4 minutes).
- Add the sliced mushrooms and cook until browned and tender (5-7 minutes).
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
- Blend the soup until smooth using an immersion blender.
- Stir in the heavy cream and season with salt and pepper to taste.
- Serve hot, garnished with freshly chopped parsley.
Notes
For extra flavor, consider using a variety of mushrooms. Can be made vegan by substituting heavy cream with coconut cream.
