Ingredients

  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup unsalted butter, melted

  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar
  • 1/4 cup sprinkles (for birthday cake effect)
  • 1 cup powdered sugar (for icing)
  • 2 tablespoons milk (for icing)
  • 1 teaspoon vanilla (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish. Lightly flour your work surface.
  2. Mix together the flour, granulated sugar, salt, baking powder, and baking soda. Stir in the melted butter, 3/4 cup milk, and 1 teaspoon vanilla extract until a soft dough forms.
  3. Turn the dough onto a floured surface and roll it into a rectangle about 10×12 inches.
  4. Combine the ground cinnamon, brown sugar, and sprinkles in a small bowl and spread this over the rolled dough.
  5. Roll the dough tightly into a log and slice into 8 even rolls, placing them cut-side up in the prepared baking dish.
  6. Bake for 20–25 minutes or until golden and cooked through.
  7. Whisk together the icing ingredients until smooth and drizzle over the warm cinnamon rolls.
  8. Serve warm with extra sprinkles if desired.

Notes

For best results, serve warm to let the icing melt slightly into the rolls. Store leftovers in an airtight container.
