Ingredients

  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup unsweetened cocoa powder
  • Powdered sugar for dusting

Instructions

  1. Cream the softened butter, granulated sugar, and brown sugar together in a large mixing bowl.
  2. Beat in eggs one at a time, incorporating each before adding the next, then stir in vanilla extract.
  3. In a separate bowl, combine flour, baking powder, and salt; gradually add to the creamed mixture.
  4. Divide the dough in half, adding cocoa powder to one half to create chocolate dough.
  5. Roll out both dough halves between parchment paper to 1/4 inch thick, layer, and roll into a log.
  6. Wrap and refrigerate for at least 2 hours.
  7. Preheat the oven to 350°F (175°C), slice the chilled log into 1/4 inch cookies, and bake for 10-12 minutes.
  8. Cool on the baking sheet and dust with powdered sugar before serving.
