Description

A delightful dessert that’s simple to make and bursts with flavor, featuring fresh blueberries and crunchy almonds in a flaky pie crust.


Ingredients

  • 1 cup fresh blueberries
  • 1/3 cup sliced almonds
  • 1 tablespoon sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 pre-made pie crust
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • Pinch of salt

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
  2. In a large bowl, combine blueberries, sliced almonds, sugar, cornstarch, vanilla extract, and a pinch of salt. Gently toss until blueberries are well coated.
  3. Roll out the pie crust on a floured surface to about 12 inches in diameter and transfer it to the prepared baking sheet.
  4. Spoon the blueberry mixture into the center of the crust, leaving a 2-inch border.
  5. Fold the edges of the crust over the filling, pleating as you go.
  6. Whisk together the egg and milk, and brush over the folded crust for a golden finish.
  7. Bake for 30-35 minutes, or until the crust is golden and the blueberries are bubbly.
  8. Let cool slightly on the baking sheet before slicing.

Notes

Best enjoyed warm or at room temperature. Pairs well with vanilla ice cream or whipped cream.
