  • 1 cup blueberries
  • 2 tablespoons honey (or to taste)
  • 1 teaspoon vanilla extract
  • 1/4 cup almond slices (optional)

Instructions

  1. Gather the cottage cheese, blueberries, honey, vanilla, and almonds. Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine cottage cheese, honey, and vanilla extract until well mixed. Taste and adjust honey for sweetness.
  3. Gently fold in the blueberries. Spread the mixture onto the prepared baking sheet to about 1/4–1/2 inch thickness. Sprinkle almond slices on top if desired.
  4. Freeze for 2–3 hours or until firm. Once frozen, break the bark into pieces and enjoy.
