- 3/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon ground cinnamon
- 1 pie crust (homemade or store-bought)
- 2 tablespoons butter, cut into small pieces
- 1 beaten egg (for egg wash, optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the blueberries, sugar, cornstarch, lemon juice, and cinnamon. Toss gently until the blueberries are coated.
- Pour the blueberry mixture into the pie crust and dot the top with butter. Cover with a top crust or create a lattice design.
- Bake for 15 minutes at 425°F, then reduce the temperature to 350°F (175°C) and bake for an additional 30-35 minutes until bubbly and golden brown.
- Remove from the oven and let cool on a wire rack before slicing.
Notes
For best results, use fresh blueberries. Adjust sugar based on berry sweetness, and allow pie to cool completely before slicing to prevent mess.
