- 1 1/2 cups fresh blueberries
- 1/2 cup shelled pistachios, chopped
- 1 tablespoon sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 pre-made pie crust or galette dough
- 1 egg (for egg wash)
- 1 tablespoon coarse sugar (for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, gently combine blueberries, chopped pistachios, sugar, cornstarch, and vanilla extract.
- Roll out the pie crust on a parchment-lined baking sheet.
- Spoon the blueberry mixture into the center of the crust, leaving a border of about 2 inches.
- Gently fold the edges of the crust over the filling, pleating as you go.
- Brush the crust with the beaten egg and sprinkle with coarse sugar.
- Bake for 30-35 minutes until the crust is golden brown and filling is bubbly.
- Allow to cool slightly before slicing and serving.
