Ingredients

  • 1 1/2 cups fresh blueberries
  • 1/2 cup shelled pistachios, chopped
  • 1 tablespoon sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 pre-made pie crust or galette dough
  • 1 egg (for egg wash)
  • 1 tablespoon coarse sugar (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, gently combine blueberries, chopped pistachios, sugar, cornstarch, and vanilla extract.
  3. Roll out the pie crust on a parchment-lined baking sheet.
  4. Spoon the blueberry mixture into the center of the crust, leaving a border of about 2 inches.
  5. Gently fold the edges of the crust over the filling, pleating as you go.
  6. Brush the crust with the beaten egg and sprinkle with coarse sugar.
  7. Bake for 30-35 minutes until the crust is golden brown and filling is bubbly.
  8. Allow to cool slightly before slicing and serving.
