Description

Ingredients

  • 1.5 lbs beef chuck, cut into cubes
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2–3 tablespoons green curry paste (adjust to taste)
  • 1 can (400 ml) coconut milk
  • 2 cups beef broth
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 cup bell peppers, sliced
  • 1 cup green beans, trimmed
  • Fresh basil leaves for garnish
  • Cooked rice for serving

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until translucent and soft, about 4–5 minutes.
  2. Increase the heat to medium-high. Add the beef cubes to the pot in a single layer and brown on all sides, stirring occasionally.
  3. Stir in the green curry paste and cook for another minute until fragrant.
  4. Pour in the coconut milk and beef broth, add the fish sauce and brown sugar, and stir to combine. Bring to a gentle boil, then reduce heat to low and cover. Simmer for about 2 hours, or until the beef is fork-tender.
  5. Add the sliced bell peppers and green beans in the last 15 minutes of cooking. Adjust seasoning if needed. Serve hot over rice and garnish with fresh basil leaves.

Notes

For a less spicy curry, start with less green curry paste and adjust according to taste. This dish can be stored in the refrigerator for up to 3–4 days or frozen for up to 3 months.
