Ingredients

  • 2 cups tapioca flour
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a mini muffin tin.
  2. In a saucepan, combine the milk, vegetable oil, and salt. Heat until boiling, then remove from heat.
  3. Pour the hot milk mixture over the tapioca flour. Stir until a sticky dough forms.
  4. Let the mixture cool slightly, then add the eggs one at a time. Mix well after each addition, then fold in the grated Parmesan.
  5. Spoon the batter into the prepared muffin tin, filling each about 3/4 full. Bake for 15-20 minutes until golden and puffed.
  6. Remove from the oven and cool slightly before serving. Enjoy warm.
