Description

Breakfast quesadillas are a delightful way to kick-start your day, combining scrambled eggs, melted cheese, and your favorite breakfast meats and veggies in a crispy tortilla.


Ingredients

  • 4 flour tortillas
  • 4 eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup cooked and crumbled bacon or sausage
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Cooking spray or oil

Instructions

  1. Whisk the eggs in a bowl and season with salt and pepper.
  2. In a skillet over medium heat, lightly grease the pan with cooking spray or oil. Pour in the whisked eggs and scramble until just set.
  3. On half of a tortilla, layer scrambled eggs, cheese, cooked bacon or sausage, bell peppers, and green onions. Fold the tortilla to close.
  4. Cook the quesadilla in the skillet until the cheese is melted and the tortilla is golden brown, approximately 2-3 minutes per side. Repeat with remaining tortillas and cut into wedges.

Notes

Serve with salsa, avocado slices, or hot sauce. Pair with fresh fruit for a balanced meal.
