Breakfast quesadillas are a delightful way to kick-start your day, combining scrambled eggs, melted cheese, and your favorite breakfast meats and veggies in a crispy tortilla.

- 4 flour tortillas
- 4 eggs
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup cooked and crumbled bacon or sausage
- 1/2 cup diced bell peppers
- 1/4 cup chopped green onions
- Salt and pepper to taste
- Cooking spray or oil
Instructions
- Whisk the eggs in a bowl and season with salt and pepper.
- In a skillet over medium heat, lightly grease the pan with cooking spray or oil. Pour in the whisked eggs and scramble until just set.
- On half of a tortilla, layer scrambled eggs, cheese, cooked bacon or sausage, bell peppers, and green onions. Fold the tortilla to close.
- Cook the quesadilla in the skillet until the cheese is melted and the tortilla is golden brown, approximately 2-3 minutes per side. Repeat with remaining tortillas and cut into wedges.
Notes
Serve with salsa, avocado slices, or hot sauce. Pair with fresh fruit for a balanced meal.
