- 8 small tortillas
- 6 eggs
- 1/2 cup milk
- 1 cup cooked and crumbled breakfast sausage
- 1 cup shredded cheese
- 1/2 cup diced tomatoes
- 1/4 cup chopped green onions
- Salt and pepper to taste
- Hot sauce (optional)
Instructions
- In a bowl, whisk together the eggs and milk, and season with salt and pepper.
- In a skillet over medium heat, scramble the eggs until they are soft and creamy.
- Warm the tortillas in a skillet or microwave until pliable and slightly toasted.
- Assemble each taco by placing scrambled eggs on each tortilla and topping with sausage, cheese, tomatoes, and onions. Add hot sauce if desired.
- Fold the tortillas over the filling and serve warm.
