- 1 cup unsalted butter
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/4 cup bourbon
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup pecans, chopped
- 1 cup chocolate chunks
Instructions
- Preheat your oven to 350°F (175°C).
- In a saucepan, melt the unsalted butter over medium heat. Continue cooking until it turns golden brown, about 5-7 minutes. Remove from heat and let cool slightly.
- In a large mixing bowl, combine the browned butter with the brown sugar and granulated sugar. Mix until smooth. Add the bourbon, eggs, and vanilla extract; beat until creamy.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture, mixing until just combined. Fold in the chopped pecans and chocolate chunks.
- Spoon dollops of cookie dough onto a parchment-lined baking sheet, spacing them about two inches apart. Bake for 10-12 minutes, until edges are golden brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a nut-free version, omit pecans and use more chocolate chunks or dried fruits. For spiced cookies, add cinnamon or nutmeg.
