Ingredients

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/4 cup bourbon
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup pecans, chopped
  • 1 cup chocolate chunks

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, melt the unsalted butter over medium heat. Continue cooking until it turns golden brown, about 5-7 minutes. Remove from heat and let cool slightly.
  3. In a large mixing bowl, combine the browned butter with the brown sugar and granulated sugar. Mix until smooth. Add the bourbon, eggs, and vanilla extract; beat until creamy.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture, mixing until just combined. Fold in the chopped pecans and chocolate chunks.
  5. Spoon dollops of cookie dough onto a parchment-lined baking sheet, spacing them about two inches apart. Bake for 10-12 minutes, until edges are golden brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a nut-free version, omit pecans and use more chocolate chunks or dried fruits. For spiced cookies, add cinnamon or nutmeg.
