A rich, nutty snack with a warm caramel aroma, featuring toasted brown butter and crunchy pistachios for a satisfying treat.


Ingredients

  • 1 cup unsalted butter
  • 1/2 cup honey
  • 1 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup shelled pistachios, chopped
  • 1 teaspoon vanilla extract
  • 1 egg

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a small saucepan over medium heat, melt the butter, swirl as it foams, and allow the milk solids to turn golden-brown. Remove from heat, stir in honey and brown sugar until smooth, then cool slightly and beat in the egg and vanilla.
  3. In a bowl, whisk together the flour, baking powder, and salt. Fold the dry mix into the butter mixture until just combined, then fold in the chopped pistachios.
  4. Pour the batter into the prepared pan, spread evenly, and bake for 25–30 minutes or until golden and a toothpick comes out clean. Cool completely before lifting out and cutting into squares.

Notes

For best results, let bars cool fully before cutting to maintain shape. Store in an airtight container for up to 3 days. Can also be frozen for up to 3 months.
