  • 1 teaspoon cinnamon
  • 2 tablespoons unsalted butter, for streusel

Instructions

  1. Gather all ingredients and measure them into a medium mixing bowl.
  2. In a separate bowl, whisk the milk, egg, melted butter, and vanilla together.
  3. Combine wet and dry ingredients, stirring gently to avoid overmixing.
  4. For the streusel, mix oats, cinnamon, and brown sugar, then stir in melted butter until crumbly.
  5. Preheat a non-stick skillet over medium heat. Pour 1/4 cup of batter onto the skillet and sprinkle streusel on top.
  6. Cook until bubbles form, then flip and cook until golden brown.
  7. Serve warm with maple syrup and optional toppings.
