Ingredients

  • 2 tablespoons brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 cup chopped pecans or walnuts (optional)
  • 1/4 cup brown sugar (for streusel topping)
  • 2 tablespoons flour (for streusel topping)
  • 1 tablespoon butter (for streusel topping)

Instructions

  1. In a large mixing bowl, whisk together the flour, 2 tablespoons brown sugar, baking powder, and salt.
  2. In a separate bowl, mix the milk, egg, melted butter, vanilla extract, and ground cinnamon until well combined.
  3. Pour the wet mixture into the dry ingredients, stirring gently until just blended.
  4. In a small bowl, combine the 1/4 cup brown sugar, 2 tablespoons flour, and 1 tablespoon of butter until crumbly.
  5. Heat a skillet over medium heat and lightly grease it. Pour 1/4 cup of batter for each pancake and sprinkle streusel topping over it.
  6. Cook until bubbles form on the top, then flip and cook until golden brown.
  7. Serve warm with maple syrup, fresh fruits, or whipped cream.

Notes

Store leftover pancakes in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
