Instructions
- In a large mixing bowl, whisk together the flour, 2 tablespoons brown sugar, baking powder, and salt.
- In a separate bowl, mix the milk, egg, melted butter, vanilla extract, and ground cinnamon until well combined.
- Pour the wet mixture into the dry ingredients, stirring gently until just blended.
- In a small bowl, combine the 1/4 cup brown sugar, 2 tablespoons flour, and 1 tablespoon of butter until crumbly.
- Heat a skillet over medium heat and lightly grease it. Pour 1/4 cup of batter for each pancake and sprinkle streusel topping over it.
- Cook until bubbles form on the top, then flip and cook until golden brown.
- Serve warm with maple syrup, fresh fruits, or whipped cream.
Notes
Store leftover pancakes in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
