Description

  • 3 ripe peaches, sliced
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan. Slice the peaches into thin wedges.
  2. In a large bowl, cream the softened butter and both sugars together until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the milk until just combined. Fold in the sliced peaches gently.
  3. Pour the batter into the prepared cake pan and smooth the top. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.
  4. Serve warm with vanilla ice cream or let cool and dust with powdered sugar.

Notes

Store covered at room temperature for up to 2 days. Refrigerate for up to 4-5 days, or freeze for up to 3 months. Use ripe but firm peaches for best results.
