- 2 cups all-purpose flour
- 2 cups sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1 cup vegetable oil
- 4 large eggs
- 2 cups grated carrots
- 1 cup crushed pineapple, drained
- 1 cup walnuts, chopped (optional)
- 1 tsp vanilla extract
- Cream cheese frosting for topping
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, beat the oil and eggs together until well blended.
- Gradually mix the dry ingredients into the wet ingredients until combined. Fold in grated carrots, crushed pineapple, walnuts (if using), and vanilla extract.
- Divide the batter evenly between prepared pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely. Frost with cream cheese frosting once cooled.
Notes
Use fresh carrots and ensure leavening agents are not expired. Customize with nuts or spices as desired.
