Delicious potstickers filled with mashed butternut squash and savory spices, offering a delightful twist on a classic dish.


Ingredients

  • 1 medium butternut squash
  • 1 cup all-purpose flour
  • 1/2 cup water
  • 1/2 tsp salt
  • 1/4 cup chopped green onions
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 clove garlic, minced
  • 1 tsp ginger, grated
  • Cooking oil for frying

Instructions

  1. Peel and cube the butternut squash. Steam or boil until tender, about 15 minutes. Mash until smooth.
  2. In a bowl, mix mashed squash with green onions, soy sauce, sesame oil, garlic, and ginger until combined.
  3. In another bowl, mix flour, salt, and water to form a smooth dough. Knead until soft and pliable.
  4. Roll out the dough to 1/8-inch thickness, cut circles, and fill with squash mixture. Fold and seal edges.
  5. Heat cooking oil in a pan over medium heat. Fry potstickers until golden brown, about 2-3 minutes. Add 1/4 cup water, cover, and steam for 5-7 minutes.
  6. Remove the lid and crisp for an additional minute. Serve hot with dipping sauce.

Notes

For best results, ensure the butternut squash is cool before filling. Adjust the dough consistency with more flour if too sticky.
