Description

These butterscotch zucchini bars are sweet, tender, and full of warm caramel-like flavor, making them a perfect treat for any occasion.


Ingredients

  • 2 cups grated zucchini
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butterscotch chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
  2. Grate the zucchini and squeeze lightly to remove excess liquid, leaving some moisture.
  3. In a large mixing bowl, combine grated zucchini, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract. Stir until smooth.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add the dry mixture into the wet ingredients, stirring until just combined. Fold in butterscotch chips gently.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 25–30 minutes, or until the top is golden and a toothpick comes out clean.
  8. Remove from oven and let cool completely on a wire rack before slicing.
  9. Slice into 12 bars and serve at room temperature.
