- 2 cups cooked chicken, shredded
- 1 can black beans, rinsed and drained
- 1 cup cooked rice
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 tablespoons Cajun seasoning
- 4 large tortillas
- 1 cup shredded cheese
- Sour cream and salsa for serving
Instructions
- In a large skillet, heat a little oil over medium heat. Add the onion and bell pepper, and sauté until softened, about 3-4 minutes. Add minced garlic and cook for an additional minute until fragrant.
- Stir in the shredded chicken, black beans, cooked rice, and Cajun seasoning. Cook until everything is heated through, about 5 minutes, mixing well to evenly distribute the seasoning.
- Warm the tortillas in a pan or microwave for about 20-30 seconds until pliable.
- Spoon the chicken mixture onto each tortilla, top with cheese, then roll them up into burritos, tucking in the sides to avoid spills. Serve warm with sour cream and salsa.
Notes
For extra flavor, marinate chicken in Cajun seasoning before cooking. Try different cheeses or add sliced jalapeños for heat.
