- 1 lb chicken breast, diced
- 2 tbsp Cajun seasoning
- 1 cup cooked rice
- 1 cup black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 bell pepper, diced
- 1 small onion, diced
- 2 tbsp olive oil
- Salt and pepper to taste
- Chopped green onions for garnish
- Sour cream or avocado for topping (optional)
Instructions
- In a bowl, toss the diced chicken with Cajun seasoning until evenly coated. Rinse and drain the black beans. If using frozen corn, thaw it. Dice the bell pepper and onion. Keep the cooked rice warm and ready to assemble.
- Heat olive oil in a large skillet over medium heat until shimmering.
- Add the seasoned chicken and cook until browned and cooked through, about 6–8 minutes, stirring occasionally. Add the diced onion and bell pepper, sautéing until softened, about 3–4 minutes. Stir in the black beans and corn, cooking until heated through, about 2 minutes. Taste and add salt and pepper if needed.
- Fluff the cooked rice with a fork and divide among bowls. Serve the Cajun chicken mixture over the rice. Garnish with chopped green onions and top with sour cream or sliced avocado if desired.
Notes
Pat the chicken dry before seasoning for a better sear. Use a hot skillet and avoid overcrowding. Adjust Cajun seasoning to taste.
