- 8 ounces elbow macaroni
- 1 tablespoon olive oil
- 1/2 pound andouille sausage, sliced
- 1/2 cup onion, chopped
- 1/2 cup bell pepper, chopped
- 2 cloves garlic, minced
- 2 cups sharp cheddar cheese, shredded
- 1 cup milk
- 1 cup heavy cream
- 1 teaspoon Cajun seasoning
- Salt and pepper to taste
- Breadcrumbs for topping (optional)
Instructions
- Cook the elbow macaroni according to package instructions; drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced andouille sausage, chopped onion, and bell pepper. Sauté until onion is translucent, about 5 minutes.
- Add minced garlic to the skillet and cook for another minute. In a separate pot, combine the milk and heavy cream, heating until warmed. Stir in Cajun seasoning and half of the sharp cheddar cheese until melted and smooth.
- Combine the cooked macaroni with the sausage mixture and cheese sauce, mixing well. Transfer into a baking dish, sprinkle with remaining cheddar cheese and breadcrumbs if desired. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes or until bubbly and golden on top. Serve hot.
Notes
Serve warm, garnished with fresh parsley or extra Cajun seasoning. Pairs well with a fresh green salad or garlic bread.
