A delightful twist on classic mac and cheese, combining creamy, cheesy goodness with bold Cajun flavors and spicy andouille sausage.


Ingredients

  • 8 ounces elbow macaroni
  • 1 tablespoon olive oil
  • 1/2 pound andouille sausage, sliced
  • 1/2 cup onion, chopped
  • 1/2 cup bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup milk
  • 1 cup heavy cream
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • Breadcrumbs for topping (optional)

Instructions

  1. Cook the elbow macaroni according to package instructions; drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced andouille sausage, chopped onion, and bell pepper. Sauté until onion is translucent, about 5 minutes.
  3. Add minced garlic to the skillet and cook for another minute. In a separate pot, combine the milk and heavy cream, heating until warmed. Stir in Cajun seasoning and half of the sharp cheddar cheese until melted and smooth.
  4. Combine the cooked macaroni with the sausage mixture and cheese sauce, mixing well. Transfer into a baking dish, sprinkle with remaining cheddar cheese and breadcrumbs if desired. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes or until bubbly and golden on top. Serve hot.

Notes

Serve warm, garnished with fresh parsley or extra Cajun seasoning. Pairs well with a fresh green salad or garlic bread.
