Description

A bright and simple bowl of comfort filled with warm, sweet carrot aroma and a hint of garlic and fresh herbs.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 carrots, chopped
  • 4 celery stalks, chopped
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh herbs (like thyme or parsley) for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent and the garlic is fragrant, about 3–4 minutes.
  2. Stir in the chopped carrots and celery. Cook and stir for about 5 minutes until the vegetables begin to soften.
  3. Pour in the vegetable broth and bring it to a boil. Reduce the heat to low, cover partially, and simmer for about 20 minutes, or until the carrots and celery are very tender.
  4. Turn off the heat and blend the soup until smooth. Season with salt and pepper to taste, and serve hot garnished with chopped herbs.

Notes

For a creamier texture, stir in 2–3 tablespoons of cream or yogurt before serving.
