Description
This bright, silky carrot ginger soup is light on ingredients but rich in flavor, featuring sweet carrots and fresh ginger.

- 1 lb carrots, chopped
- 1 onion, chopped
- 2 tbsp ginger, grated
- 4 cups vegetable broth
- 1 tbsp olive oil
- Salt and pepper to taste
- Optional: cream for garnish
Instructions
- Peel and chop the carrots into even pieces. Chop the onion and grate the ginger.
- Heat olive oil in a pot over medium heat. Add onion and sauté until translucent and soft, about 5 minutes.
- Add ginger and carrots to the pot; cook for 2–3 minutes until fragrant.
- Pour in vegetable broth and bring to a boil. Reduce heat and simmer until carrots are tender, about 20 minutes.
- Use an immersion blender to puree the soup until smooth, or blend in batches.
- Season with salt and pepper to taste. Serve warm with cream or herbs if desired.
Notes
For deeper flavor, roast the carrots before adding them to the soup. Fresh ginger is recommended for the best taste.
