Ingredients

  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 cup shredded cheddar cheese
  • 2 jalapeños, finely chopped

Instructions

  1. Preheat your waffle iron according to manufacturer instructions and lightly grease it with melted butter or spray.
  2. In a large bowl, whisk together the cornmeal, flour, baking powder, and salt. In a separate bowl, whisk the buttermilk, eggs, and melted butter.
  3. Combine wet and dry ingredients until just mixed, then fold in cheddar and jalapeños.
  4. Grease the iron, pour in the batter, and cook until golden brown and crispy, 4–6 minutes.

Notes
