- 1 spaghetti squash
- 1 pound ground beef or turkey
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the inside with olive oil and sprinkle with salt and pepper. Place cut-side down on a baking sheet and roast for 30-40 minutes until tender.
- While the squash roasts, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add ground beef or turkey, breaking it into smaller pieces as it browns. Season with oregano, basil, salt, and pepper. Continue cooking for 5-7 minutes until browned. Stir in marinara sauce and simmer for 5 minutes.
- Once the spaghetti squash is cooked, use a fork to scrape out strands. Combine with meat sauce in a mixing bowl. Transfer to a baking dish, top with mozzarella cheese, and broil for 2-3 minutes until bubbly and golden. Garnish with parsley before serving.
Notes
Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
