- 1 cup cooked bacon, chopped
- 1/2 cup onion, finely chopped
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup cream cheese, softened
- 1/4 cup brown sugar
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon black pepper
- 1 package of pastry dough (or pie crust)
- Fresh herbs for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C). Unroll the pastry dough on a lightly floured surface.
- In a skillet over medium heat, add the chopped cooked bacon and finely chopped onion. Sauté until the onion becomes translucent and slightly golden.
- Stir in the brown sugar and balsamic vinegar to the bacon and onions, cooking until the mixture thickens slightly.
- In a bowl, mix the shredded cheese and softened cream cheese until smooth, then season with black pepper.
- Roll out the pastry dough and cut it into small circles, about 2 to 2.5 inches wide. Place them on a baking sheet lined with parchment.
- Press your thumb into the center of each pastry circle to make a shallow indent.
- Fill each indent with about a teaspoon of bacon jam mixture, then add a small dollop of the cheese mixture on top.
- Bake in the preheated oven for about 15–20 minutes or until the pastry is puffed and golden brown and the cheese is melted.
- Let cool for a few minutes, then garnish with chopped fresh herbs if desired. Serve warm.
Notes
For best results, do not overfill the pastry cups and use day-old cooked bacon for better caramelization. They’re freezer-friendly for up to a month.
