Description

Ingredients

  • 1 can white beans (cannellini or great northern), drained and rinsed
  • 1 cup spinach (fresh or frozen)
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add minced garlic to the skillet and sauté until fragrant, about 1 minute.
  3. Stir in the white beans and Italian seasoning, cooking until heated through, about 3-4 minutes.
  4. Add the spinach to the skillet and cook until wilted, about 2 minutes.
  5. Sprinkle shredded cheese over the mixture and cover the skillet until melted, about 3-5 minutes.
  6. Season with salt and pepper to taste and garnish with fresh parsley before serving.

Notes

For additional flavor, add a pinch of red pepper flakes while sautéing garlic. This dish can be made vegan by substituting with vegan cheese or omitting cheese altogether.
