Instructions
- Heat olive oil in a skillet over medium heat.
- Add minced garlic to the skillet and sauté until fragrant, about 1 minute.
- Stir in the white beans and Italian seasoning, cooking until heated through, about 3-4 minutes.
- Add the spinach to the skillet and cook until wilted, about 2 minutes.
- Sprinkle shredded cheese over the mixture and cover the skillet until melted, about 3-5 minutes.
- Season with salt and pepper to taste and garnish with fresh parsley before serving.
Notes
For additional flavor, add a pinch of red pepper flakes while sautéing garlic. This dish can be made vegan by substituting with vegan cheese or omitting cheese altogether.
