- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 3 large eggs
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract

- Cream together softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
- Add eggs one at a time, beating well after each addition. Mix in vanilla and almond extracts.
- In another bowl, whisk together flour and baking powder. Gradually incorporate this into the creamed mixture, alternating with milk, and beat until smooth.
- Divide the batter between the cake pans and bake for 25-30 minutes, or until a toothpick comes out clean.
- Cool in pans for 10 minutes, then transfer to wire racks to cool completely. Frost and decorate with cherry blossoms before serving.
Notes
Ensure all ingredients are at room temperature, especially the butter and eggs. Don’t overmix the batter after adding flour to prevent a dense cake.
